Enzymes and lemons

Here S4 look at the effect of changing the pH of an enzyme. This enzyme produces a substance that reacts with air to make fruit brown. If the enzyme doesn't work the fruit doesn't go brown. The class took two bites from an apple then put lemon juice on one of the bites. The side with lemon juice did not go brown as the pH changed the shape of the enzyme so it didn't work.
